MAKHANA RAITA

 

Ingredients:

  • 1 cup Agranik  Makhana (fox nuts)
  • 1 ½ cups plain yoghurt (chilled)
  • ¼ cup milk (chilled)
  • 2 teaspoons sugar
  • 1 teaspoon black salt
  • ½ teaspoon roasted cumin powder
  • ½ teaspoon regular white salt (or to taste)
  • 1 teaspoon chopped green chillies
  • 1 tablespoon chopped coriander (fresh coriander leaves)
  • 1 tablespoon ghee

 

Instructions:

  1. Heat ghee in a pan over medium flame.
  2. Once the ghee is hot, add the Makhana and roast until crispy.
  3. Mix the yoghurt, milk, sugar, black salt, roasted cumin powder, and white salt in a mixing bowl.
  4. Add the roasted Makhana to the yoghurt mixture and mix well.
  5. Garnish with chopped green chillies and coriander.
  6. Serve immediately.

 

Tips:

  • Add more milk or water if the raita is too thick.
  • You can temper the raita with ghee, curry leaves, asafetida, cumin seeds, and dry red chillies for a different flavour.
  • Store the yoghurt mixture and Makhana separately for up to 3 days in the refrigerator, and mix them when ready to serve for a crunchy raita.
  • If you prefer crunchy Makhana, add them just before serving.
  • If you prefer soft Makhana, add them to the yoghurt 10 minutes before serving.
